How are you? How are your friends? How is your relationship with your friends? Things are busy, right? And at the end of the week, you’re just too tired to go out club, club, clubbing with your best buds. In this day and age you can’t afford (and don’t need) to be out on the town just to show your friends you still enjoy them. So here’s a modern-day alternative to bonding experiences like barn-raisings: make an intimate little meal for your closest pals.


 


I’m going to share a recipe with you that will revitalize your relationships-- nay, bring them to a higher level. This Spicy Chicken Chowder will set the mood for good, old-fashioned bonding. That’s right, the creamy texture will warm your stomachs, your hearts, and your pants-- because there’s nothing like farting your brains out to bring a group of people together.


 


Spicy Chicken Chowder*


 


Ingredients:




  • 1 lb. white beans, dried


  • 2 quarts chicken broth


  • 2 cups half-and-half


  • 1 onion, chopped


  • 2 cloves garlic, minced


  • 1 jalapeno pepper, minced


  • 2 tbsp. butter


  • 2 boneless chicken breasts, cubed


  • 1 tsp. cayenne pepper


  • salt and pepper to taste


  • pepper jack cheese, shredded, and tortilla chips for garnish

Procedure:


 


Add beans to stock and simmer 20 minutes until they are tender.


 


In a separate pan, sauté the onion, garlic, and jalapeno in the butter.


 


Remove to a dish and sauté the chicken in the pan until the cubes are almost cooked.


 


Purée half (or more) of the bean/stock mixture with an immersion or regular blender.


 


Add the rest of the ingredients to the beans/stock except for the cheese and chips.


 


Bring to a boil over medium heat.


 


Reduce heat and simmer uncovered until the soup begins to thicken.


 


Garnish each bowl with cheese and broken chips.**
